So as a full time working mom, it's next to impossible to always make dinner or have the energy to even want to make dinner. But i have realized that I can make delicious baked goods every weekend that last throughout the week. This allows me to provide something homemade for my family that we can all enjoy even on nights were we do take out or left overs.
I love the idea of baking. It's a relaxing thing that has a pretty easy and delicious pay off. My husband and friends seem to enjoy the left overs (which helps the waist line).
This weekend I happened to have lots of very ripe fruit, so in between playing with my little boy and watching movies with my husband, I took advantage of what we had around the house.
I made almond cupcakes with raspberry frosting, banana-nut bread, and peach cupcakes.
I love making cupcakes since you can make as much or as little as you want and they are treats you can have without a lot of guilt. I have posted below the fruits of my labor (no pun intended...ok, well maybe a little bit)
the cupcakes were delightful and airy and the frosting was tart and sweet (although, it separated on me a little bit towards the end)
This banana-nut bread is rich and not too sweet. I used pecans and sweetened coconut in the batter which gave it a wonderful texture. Making this filled the house with the most wonderful smell, and it took no time to make. Courtesy of Martha Stewart and her Baking book. (a gift from my brother two years ago for Christmas, it was the best gift i got until the recent kitchen aid mixer the hubby got me).
This cake came out sweet and full of peach flavor. The peaches are in small chunks in the batter and in a puree that was incorporated into the frosting. Again the frosting here separated a little, so I'll have to figure out what exactly I'm doing wrong...gives me some homework (fruit frosting's) to figure out!
All this baking makes me feel like perhaps I may be able to do and have it all...and that's the goal isn't. To be Martha Stewart in the kitchen, Carol Brady to my son, Oprah to my friends, Sofia Vergara to my husband, and an amazing attorney from 9-5pm every weekday.
